Fresh Zucchini Salad with Turkey & Egg Sandwiches

A fresh and satisfying breakfast for two that’s also perfect for brunch

Some mornings call for a breakfast that’s quick, fresh, and satisfying without spending much time in the kitchen. This simple zucchini salad with cucumber and tomatoes, served with whole grain sandwiches topped with creamy cheese, turkey, and hard-boiled eggs, is one of my favorite combinations.

It’s easy to make, full of fresh ingredients, and perfect for breakfast. It also works wonderfully as a relaxed weekend brunch when you want something light but filling.


Ingredients (Serves 2)

For the Salad

  • 400 g zucchini, coarsely grated
  • ½ long cucumber, diced
  • 2 medium tomatoes, diced
  • 150 g low-fat Greek yogurt
  • 1 tbsp mustard
  • salt and freshly ground black pepper, to taste

For the Sandwiches

  • 4 slices whole grain bread
  • low-fat cream cheese
  • 4 slices turkey cold cuts
  • 4 hard-boiled eggs
  • salt and freshly ground black pepper, to taste

Instructions

Prepare the Salad

  1. Sprinkle the grated zucchini with a little salt and let it sit for about 10 minutes.
  2. Squeeze out as much liquid as possible.
  3. Place the zucchini in a large bowl.
  4. Add the diced cucumber and tomatoes.
  5. Stir in the Greek yogurt and mustard.
  6. Season with salt and freshly ground black pepper.
  7. Mix well until everything is evenly combined.

Prepare the Sandwiches

  1. Spread a thin layer of low-fat cream cheese on each slice of whole grain bread.
  2. Top with the turkey slices.
  3. Slice the hard-boiled eggs and arrange them on top.
  4. Season with a little salt and freshly ground black pepper.

Serve the sandwiches with the fresh zucchini salad.


Storage

The salad is best enjoyed fresh but can be stored in the refrigerator for up to 1 day.

For the best texture, prepare the sandwiches just before serving.
