Healthy Chicken Aspic

A light homemade version of a traditional Polish favorite

Chicken aspic has been part of Polish family celebrations for generations. You’ll often find it on holiday tables, birthdays, weddings, or other special occasions.

This is the lighter version I make at home. Instead of a rich meat broth, I use a clear vegetable broth with tender chicken, colorful vegetables, and hard-boiled eggs. It’s fresh, light, and perfect served in individual portions.

If you’ve never tried Polish chicken aspic before, this is a great recipe to start with.


Ingredients

This recipe makes about 12–15 individual portions.

For the Chicken

  • 1.5 kg chicken thighs or drumsticks
  • 1 carrot
  • 1 parsley root (or another carrot if unavailable)
  • a small piece of celery root
  • 1 onion, peeled
  • 2 bay leaves
  • 4 allspice berries
  • salt to taste

For the Vegetable Broth

  • 2 carrots
  • 1 parsley root
  • a small piece of celery root
  • 1 onion (leave the skin on for a richer color)
  • 3 bay leaves
  • 5 allspice berries
  • salt
  • freshly ground black pepper
  • 3 liters water
  • gelatin (according to the package instructions for 3 liters of liquid)

For Assembly

  • shredded cooked chicken
  • cooked carrot slices
  • 4 hard-boiled eggs, sliced
  • canned green peas, drained

Instructions

Cook the Chicken

Place the chicken, vegetables, bay leaves, allspice, and salt into a large pot.

Cover with water and cook over low heat for about 1–1½ hours, until the chicken is tender.

Remove the chicken and let it cool before shredding it into bite-sized pieces.

Save one cooked carrot for decorating the aspic.


Prepare the Vegetable Broth

In another pot, combine the vegetables, onion, spices, and 3 liters of water.

Cook for 45–60 minutes.

Strain the broth.

Season with salt and freshly ground black pepper.

Add the gelatin following the instructions on the package and stir until completely dissolved.

Do not boil the broth after adding the gelatin.


Assemble the Portions

Arrange the ingredients in small containers, ramekins, or silicone molds.

Add:

  • carrot slices
  • egg slices
  • a spoonful of green peas
  • shredded chicken

Pour the warm broth over the ingredients until everything is covered.


Chill

Allow the portions to cool to room temperature.

Refrigerate for at least 4 hours, preferably overnight, until completely set.


Serving Suggestions

Serve chilled with fresh bread, horseradish, mustard, or a squeeze of lemon.

Chicken aspic is perfect for Easter, Christmas, family celebrations, or as a light make-ahead lunch.


Storage

Keep covered in the refrigerator for 4–5 days.

Do not freeze, as the texture of the gelatin will change.

  • Leave the onion skin on when making the vegetable broth for a beautiful golden color.
  • Let the broth cool slightly before pouring it into the molds.
  • Transparent containers show off the colorful layers beautifully.
  • Make it the day before serving for the best texture.
